This Egg Roll in a Bowl is exactly how it sounds. The yummy, healthy ingredients of an egg roll without the hassle of rolling them or the added fats from deep frying. In about 20 minutes, you can enjoy your favorite Asian side dish in the comfort of your own home.

Feel free to change up the meat or make it vegetarian with tofu or tempeh.

Ingredients (serves 4)

  • 4-5 scallions, sliced with the white and green portions, separated
  • 1 small white onion, diced
  • 1 pound of ground turkey
  • 1 package of coleslaw mix
  • 1 cup frozen shelled edamame, cooked
  • 1 teaspoon ginger, freshly ground
  • 2 teaspoons garlic, minced
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon hoisin sauce
  • ¼ cup low-sodium soy sauce (or coconut aminos)
  • 1 teaspoon Siracha (optional)
  • Salt and pepper to taste

Preparation

  1. Place a large skillet over medium-high heat. Add
    the onion and the white portion of the scallions.
    Cook until fragrant and soft. Add the ground
    turkey and cook until it is cooked all the way
    through.
  2. Add the ginger, garlic, vinegar, hoisin sauce, and
    soy sauce. Mix together to evenly coat.
  3. Add the coleslaw mix and edamame beans to
    the mixture and stir. Cook, while stirring, for
    about 5-8 minutes, so the cabbage begins to
    wilt.
  4. To serve, top with the remaining green portions
    of the scallions, salt, and pepper to taste, and
    Siracha if you would like more heat.
