Pumpkin Overnight Oats

Fall is a busy time of year for many of us, and busy schedules sometimes make it hard find time to fit in breakfast! Give this easy make-ahead, fall-inspired Pumpkin Overnight Oats recipe a try to save you time in the morning and to keep you satisfied until lunch. Ingredients (serves 1)

  • ¼ cup plain low-fat Greek yogurt
  • ½ cup low-fat milk
  • ¼ cup pumpkin puree
  • 1-2  tablespoons maple syrup or honey
  • ½ teaspoon vanilla extract (optional)
  • ½ cup rolled or Old Fashioned oats
  • 2 teaspoons chia seeds
  • ½ teaspoon pumpkin pie spice

 


Preparation

1) In a small bowl, mix together the wet ingredients: Greek yogurt, low-fat milk, pumpkin puree, vanilla (optional), and 1-2 tablespoons maple syrup or honey.

2) Add oats, chia seeds and pumpkin pie spice to the wet ingredients. Mix well, making sure the oats are well coated with the wet ingredients.

3) Pour into a glass jar or storage container and place in your refrigerator for at least 4 hours or overnight.
