Tian Provencal

Have you ever dreamt of taking a summer vacation to the South of France? Transport yourself to the Cote d’Azur coast through food with Tian Provencal, a traditional French dish which features thinly sliced vegetables arranged in concentric circles. It’s the perfect centerpiece for an al fresco summer dinner!

Ingredients (serves 4)

  • 3 tomatoes
  • 2 zucchini
  • 2 eggplant
  • 1 onion
  • 2 peppers
  • 2 cups, tomato sauce
  • Extra virgin olive oil
  • Herbs de Provence
  • Fresh basil

Preparation

  1. Preheat the oven to 350 degrees.
  2. Cut the tomatoes, zucchini, and eggplant into 1/4″ rounds.
  3. Cut onions and peppers into thin strips. Season and sauté in olive oil until lightly colored and soft.
  4. Ladle a thin layer of tomato sauce into your cooking pan. Add a layer of the cooked peppers and onions.
  5. Tightly pack the tomatoes, zucchini, and eggplant all around the pan in an alternating pattern.
  6. Brush the tops of the vegetables with olive oil. Season with the Herbs de Provence, salt, and pepper.
  7. Cover the pan in foil and bake in oven for 15 minutes.
  8. When done, take the pan out of the oven, and take off the foil. Let the tian cool for ten minutes, then add chiffonade basil on top as a garnish.
