These Chocolate Baked Oats are sweet yet still nourishing. Blending and baking the ingredients creates a fluffy, cake‑like texture that’s completely different from traditional stovetop oatmeal. It tastes like dessert, fuels like breakfast, and couldn’t be easier!

Ingredients (serves 1)

  • 1 cup rolled oats
  • 2 ripe bananas OR 1 cup applesauce
  • 2 large eggs
  • 2 tablespoons maple syrup
  • 1 teaspoon baking powder
  • 2 tablespoons cocoa powder
  • Pinch of salt
  • Cooking spray

Preparation

  1. Preheat the oven to 350 degrees.
  2. Grease a ramekin or oven-safe pan with cooking spray.
  3. In a blender, combine all the ingredients until smooth and well-blended, about 1 minute.
  4. Transfer the batter into the prepared ramekin. Bake for 20-25 minutes, until a cake tester inserted in the center comes out with just a couple of crumbs.
  5. Allow to cool in the pan for 10 minutes before serving.
