Ingredients (serves 1)

Salad

  • 1 can chickpeas
  • 1 can cannellini beans
  • 1 red bell pepper (finely diced)
  • 1 orange or yellow bell pepper (finely diced)
  • 1/2 large cucumber (finely diced)
  • 1/2 small red onion
  • 1/2 cup kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/3 cup finely chopped parsley
  • Corn tortillas (cut and baked into chips)

Dressing

  • 1/4 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1 1/2 tsp honey or pure maple syrup
  • 1 1/2 tsp dried oregano
  • 3 cloves garlic
  • 3/4 tsp salt
  • 1/4 tsp freshly ground black pepper

Preparation

  1. Preheat oven to 350 degrees F. Cut corn tortillas into bite-sized pieces and bake for 5-10 minutes until crisp. (Or purchase pre-packaged corn tortilla chips.)
  2. Make the dressing by whisking together all ingredients until combined.
  3. Finely dice bell peppers, cucumber, and red onion.
  4. Rinse beans in a strainer. In a large mixing bowl, add beans, peppers, cucumbers, onion, parsley, olives, and feta.
  5. Pour the dressing over the salad. Toss gently until evenly coated.
  6. Chill mixture and serve! For best flavor, cover and refrigerate for 30 minutes before serving.
