Apple Cinnamon Baked Oatmeal

Do you find it difficult to make breakfast a part of your daily routine? Save time with Apple Cinnamon Baked Oatmeal! This dish can be prepared in advance and simply reheated for a nutritious, energy boosting breakfast. 

Ingredients (serves 9)

  •  2 3/4 cups old fashioned rolled oats 

  • 1 1/2 teaspoons ground cinnamon 

  • 1 teaspoon baking powder 

  • 1/4 teaspoon salt 

  • 1/4 cup maple syrup or honey 

  • 1/2 cup unsweetened applesauce 

  • 2 whole eggs 

  • 1 1/4 cups low fat milk 

  • 1/4 cup unsalted butter, melted 

  • 1 teaspoon vanilla extract 

  • 1 cup shredded or finely diced apples, with peel 

  • 1/3 cup chopped walnuts, toasted 


  1. Preheat oven to 375° F. Spray a 9×9-inch baking dish with cooking spray. 
  2. In a medium mixing bowl, combine the oats, cinnamon, baking powder, salt, maple syrup, applesauce, eggs, milk, butter, and vanilla. Stir until combined. 
  3. Fold in the apples and toasted walnuts. 
  4. Transfer batter to the prepared dish. Top with a few chopped toasted walnuts. 
  5. Bake for 30-35 minutes, until the center is set. 
  6. Let sit for 10 minutes before serving. 
  7. Top with Greek yogurt or fruit.
