Baked Tilapia Faux Ceviche

This Baked Tilapia Faux Ceviche is a simple twist on a classic favorite. The tilapia is baked, then mixed with lime juice, cilantro, onion, and tomato to create a refreshing, protein-packed dish full of bright flavor.

Ingredients (serves 4)

  • 4 (6- to 8-ounce) tilapia filets 
  • 1/2 teaspoon kosher salt 
  • 1/4 teaspoon freshly ground black pepper 
  • 3 tablespoons of olive oil 
  • 2 clovesgarlic, minced 
  • Juice and zest from 2 limes + 3/4 cup lime juice (~6-8 limes) 
  • ½ cup cilantro, roughly chopped 
  • ¼ cup green onions, chopped 
  • ½ cup white or red onion, finely chopped 
  • ½ cup tomato, finely chopped 
  • 2 tablespoons of hot sauce (optional) 

Preparation

  1. Preheat oven to 400°F. Season tilapia on both sides with salt and pepper. Place on a baking sheet. 
  2. Combine oil, lime juice, and lime zest in a small bowl. Drizzle over the tilapia.  
  3. Bake for 15-20 minutes until fork-tender and translucent and cooked to an internal temperature of 145 degrees F. Let cool. 
  4. Combine cilantro, green onion, and tomato with lime juice and hot sauce. 
  5. Chop tilapia into bite-sized pieces and combine with the mix.
