Baked Zucchini Curly Fries

These zucchini “fries” are an easy and fun way to eat your veggies! They are simple to prepare and can make an excellent side dish or fun snack for kids. Don’t have a spiralizer? Just slice them into chips and follow the recipe as written.

Ingredients (serves 6)

  • 12 ounces of zucchini (about one medium zucchini), spiralized into strips or sliced into chips
  • 1/4 cup cornstarch
  • 4 egg whites
  • 1 cup panko breadcrumbs
  • 3/4 ounce grated parmesan cheese (about 1/4 cup)
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • Nonstick cooking spray

Preparation

  1. Preheat the oven to 425 degrees F. Coat two baking sheets with nonstick spray.
  2. If zucchini strips are long, cut into 3-4 inch pieces.
  3. Place zucchini in a bowl and add cornstarch. Toss well to coat.
  4. Place egg whites in another medium shallow bowl or baking dish.
  5. .ombine panko, parmesan cheese, oregano and salt in a third dish or bowl.
  6. Working in small batches, shake excess cornstarch from zucchini and dredge in egg whites.
  7. Shake excess egg white from zucchini and coat in panko mixture.
  8. Place in a single layer on a baking sheet, keeping some space between zucchini pieces to allow for even browning.
  9. Once all the zucchini has been coated with bread crumbs and placed on baking sheets, spray lightly with cooking spray.
  10. Bake for 10-12 minutes until crisp and brown.
  11. Serve hot with a light ranch dressing or marinara sauce.
