These Banana Oatmeal Cookies are the perfect way to use up those overripe bananas sitting on your counter. They’re an easy, grab-and-go snack made with wholesome ingredients—gluten-free, dairy-free, and naturally sweetened with honey instead of refined sugar. Great for busy mornings, afternoon snacks, or a healthier treat anytime.

Ingredients (serves 18)

  • 3 overripe bananas
  • 2 tablespoons honey (or maple syrup)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cup quick cooking oats
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon fine sea salt
  • 1/2 cup chocolate chips
  • (other add-ins: white chocolate chips, dried cranberries, raisins, shredded coconut)

Preparation

  1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper and set aside.
  2. In a large mixing bowl, mash the bananas.
  3. Add the honey, egg, and vanilla. Stir to combine.
  4. Add oats, cinnamon, and sea salt. Stir until combined.
  5. Use a tablespoon measuring spoon or a 1 1/2 tablespoon cookie scoop to measure portions of the dough. Place them on the prepared baking sheet about 2″ apart.
  6. Bake in the preheated oven for 12-15 minutes, or until the tops are just set and the bottoms are very lightly browned.
  7. Let cool on the baking sheet for 5 minutes before transferring to a wire cooling rack to cool completely.
  8. Serve slightly warm or at room temperature.
