Creamy, cheesy, and full of flavor, this cauliflower leek gnocchi bake makes for a cozy and satisfying meal. It’s an easy way to incorporate more vegetables while still enjoying your favorite comfort-food flavors.
Ingredients (serves 1)
1 (12-ounce) bag of frozen cauliflower rice OR 1 small head of cauliflower, finely chopped
2 leek stalks, quartered lengthwise and thinly sliced
2 cloves garlic, minced
1 teaspoon salt
¼ teaspoon pepper
1 teaspoon olive oil
1 ¼ cups milk
½ cup heavy cream
1 cup cheddar cheese, shredded
2 (16-ounce) packages shelf-stable gnocchi
1 cup Parmesan cheese, shredded
1-2 tsp finely chopped parsley (optional garnish)
Preparation
Preheat the oven to 375°F. If using fresh cauliflower, finely chop it. Prepare the leeks and garlic.
Add the cauliflower, leeks, garlic, olive oil, salt, and pepper to a 9 x 13-inch baking dish. Toss to combine and roast for 15-20 minutes, or until the vegetables are tender and nearly cooked through.
Meanwhile, stir together the milk, heavy cream, and cheddar cheese in a bowl.
Remove the baking dish from the oven. Add the gnocchi and milk mixture, stirring until evenly combined.
Sprinkle the Parmesan cheese over the top.
Bake for 25 minutes, or until the sauce is bubbling and the top is golden brown. Let cool for 5 minutes before serving.
