Chickpea Salad

Looking for the perfect lunch idea? Try out this chickpea salad! This vegetarian recipe is made with a few flavorful, simple ingredients. The Greek yogurt base mixed with chickpeas helps to boost protein! Serve in a sandwich, wrap, or on top of a salad!

Ingredients (serves 4)

  • 2 (15-oz) cans chickpeas
  • ¾ cup celery
  • ½ cup diced dill pickles
  • ½ cup chopped green onion
  • ½ cup plain Greek yogurt of your choice
  • 1 tbsp lemon juice
  • 5 tbsp dijon
  • 2 tsp red wine vinegar
  • 2 tbsp chopped, fresh dill
  • 2 tbsp chopped, fresh parsley
  • ¼ tsp garlic powder
  • ¼ tsp salt


  1. Rinse and drain chickpeas. Pat dry and place in a large bowl
  2. Mash chickpeas with a fork or potato masher until mostly mashed
  3. Add in celery, onion, and pickles
  4. In a small bowl, whisk together Greek yogurt, lemon juice, mustard, red wine vinegar, dill, parsley, garlic powder, and salt
  5. Add sauce to the chickpea mixture.
  6. Optional: serve as a sandwich, a wrap, or in a salad!
