The secret ingredient in this chocolate pudding… silken tofu! Not only does this create a smooth texture, but packs in some protein! The melted chocolate and spices add to the flavor and sweetness. Once the ingredients are blended together, chill for 30 minutes and serve!

Ingredients (serves 6)

  • ½ cup sugar 
  • ½ cup water 
  • 1 pound silken tofu 
  • 8 ounces bittersweet or semisweet chocolate 
  • 1 teaspoon vanilla extract 
  • 1½ teaspoons ground cinnamon 
  • ½ teaspoon chili powder, or more to taste 


  1. In a small pot, combine the sugar and water; bring to a boil and cook until the sugar is dissolved, stirring occasionally. Cool slightly. 
  2. While the sugar mixture is still warm (but not scorching hot), add the chocolate and stir until melted. 
  3. Put all ingredients in a blender and puree until completely smooth, stopping machine to scrape down its sides if necessary. You can add a little water, one tablespoon at a time, to reach your desired consistency if it’s too thick. 
  4. Divide among 6 serving bowls and chill for at least 30 minutes. 
  5. If you like, garnish with chocolate chips or chocolate shavings before serving.
