Easy Whole Grain Pancakes

Making pancakes from scratch is easier than you think and chances are, you have most of the ingredients in your pantry! Try topping with fruit and nuts for a super healthy breakfast.

Ingredients (serves 4)

  1. 1 cup whole wheat flour
  2. 1/2 cup quick-cooking oats
  3. 1/2 teaspoon salt
  4. 2 teaspoons baking powder
  5. 1 teaspoon ground cinnamon
  6. 1 large egg (or egg whites)
  7. 1 cup milk
  8. 1 tablespoon sugar
  9. Nonstock cooking spray

Preparation

  1. Mix the flour, oats, salt, baking powder, and cinnamon together in a large bowl. Set aside.
  2. In a separate medium bowl, whisk the egg, milk, sugar, and vanilla until combined.
  3. Make a well in the dry ingredients and pour the wet ingredients in. Stir gently until just combined. Do not overmix the batter or your pancakes will be tough. Add any mix-ins you prefer, but again, do not overmix the batter.
  4. Heat a griddle or skillet over medium heat. Coat generously with cooking spray, oil, or butter. Once hot, drop about 1/4 cup of batter on the griddle. Cook until the edges look dry and bubbles begin to form on the center or sides, about 1 minute. Flip and cook on the other side until cooked through, about 2 minutes. Coat griddle/skillet again with nonstick spray for each pancake or batch or pancakes.
  5. Serve warm with your favorite toppings!
