Lemon Salmon Skewers

Bright, fresh, and full of flavor, these Lemon Salmon Skewers are an easy way to bring a healthy seafood dish to the table. The salmon is baked until tender, then topped with a vibrant basil vinaigrette that adds a fresh herb flavor and bright citrus notes.

Ingredients (serves 6)

Skewers 

  • 8 wooden skewers
  • 2 lbs sockeye salmon or another fresh salmon of your choice
  • 3-4 lemons
  • 3 tablespoons olive oil
  • Kosher salt and freshly ground black pepper

Basil Vinaigrette

  • 1 small shallot roughly chopped (about 2-3 tablespoons)
  • 2 cups tightly packed fresh basil leaves stems removed
  • 2 cloves garlic
  • ½ teaspoons red pepper flakes (optional)
  • ½ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon kosher salt plus more to taste

Preparation

  1. Soak the wooden skewers in water for at least an hour.
  2. Heat your grill to medium-high heat.
  3. Cut the salmon into 1-inch cubes. Thinly slice 3 lemons using a sharp knife or mandoline.
  4. Thread the salmon and lemon slices onto the skewers, alternating between the two and using about 5 to 6 pieces of salmon per skewer.
  5. Drizzle the skewers with olive oil and season generously with salt and pepper. Squeeze the juice from half of the remaining lemon over the skewers.
  6. Place the skewers on the preheated grill using tongs. Grill for about 3 minutes per side, or until the salmon is nearly cooked through.
  7. Remove the skewers from the grill and let them rest for 5 minutes. The residual heat will finish cooking the salmon.
  8. Serve the salmon skewers with Basil Vinaigrette (blend all vinaigrette ingredients until smooth, about 1 minute) and additional lemon wedges, if desired.
